No Bake Matcha Tiramisu

Key Takeaways

  • This matcha tiramisu swaps coffee for matcha, creating an elegant no-bake dessert with layers of matcha-soaked ladyfingers and mascarpone cream.
  • The no-bake method means assembly takes about 20 minutes — then just refrigerate for 4+ hours (overnight is best) for the flavors to meld.
  • Use ceremonial grade matcha for the soaking liquid to ensure a smooth, balanced flavor that complements the rich mascarpone.
  • Dust the top generously with matcha powder just before serving for the most vibrant color and freshest flavor.

A modern take on the classic Italian dessert, with a Japanese twist.

This no-bake matcha tiramisu is light, creamy, and just the right amount of earthy. It’s perfect for special occasions or when you want to impress guests without turning on the oven. Serve it chilled in a glass dish, ramekins, or even as individual cups for a clean presentation.

Ingredients

For the Matcha Soak:

  • 2 tsp Nippon Matcha

  • 1 cup hot water (not boiling)

  • 1 tbsp honey or maple syrup (optional)

For the Cream Layer:

  • 1 cup heavy whipping cream (cold)

  • 1 cup mascarpone cheese

  • ¼ cup sugar

  • 1 tsp vanilla extract

Other:

  • 1 pack ladyfinger biscuits (Savoiardi)

  • Extra Nippon Matcha, for dusting

Instructions

  1. Make the matcha soak:
Whisk Nippon Matcha into the hot water until smooth. Stir in honey or maple syrup if using. Let cool to room temperature.

  2. Whip the cream:
In a chilled bowl, beat the heavy cream with sugar and vanilla until soft peaks form.

  3. Add mascarpone:
Gently fold in the mascarpone until fully combined and smooth.

  4. Assemble:
Quickly dip ladyfingers into the matcha soak (1–2 seconds per side) and line the bottom of your serving dish.
Spread half the mascarpone mixture on top.
Add another layer of soaked ladyfingers, then the remaining mascarpone mixture.

  5. Chill:
Cover and refrigerate for at least 4 hours, or overnight for best flavor and texture.

  6. Dust and serve:
Just before serving, dust generously with Nippon Matcha using a fine sieve.

Tips

  • Don't over-soak the ladyfingers — a quick dip is enough.

  • Want it a bit boozy? Add a splash of sake or Japanese whiskey to the matcha soak.
